Avocado-stuffed deviled eggs

6 eggs
1 avocado
1 tbs lemon juice
1 red bell pepper
Salt
Black pepper

Method
- Wash the pepper, cut it in half, remove the seeds, and cut 12 devil’s horns. Set aside.
- Boil the eggs in plenty of salted water for 12 minutes. Remove and let cool.
- Peel the egg, cut in half, and remove the yolks.
- Cut the avocado in half, remove the stone, and scoop out the flesh. Mix with the yolks, lemon juice, salt, and black pepper.
- Fill the egg whites with the above mixture, using a pastry bag with a star nozzle, and top with the devil’s horns

Avocado Witch Finger Cookies
Ingredients
75g melted butter
100g of sugar
A pinch of salt
2 eggs
1 medium avocado
1 tsp lemon juice
225g ground almonds or almond flour
100g wheat flour
Whole raw, shelled almonds
Strawberry, raspberry, cherry jam
*Optional: green gel food coloring (to enhance the color)

Method
- Mix all ingredients well except the whole almonds and the jam.
- Refrigerate the resulting dough for 30 minutes.
- Take portions of the dough and roll them out into finger shapes, marking the edges with the blunt side of a knife.
- Place a raw almond on the tip of each cookie to represent finger nails. Pressing down gently.
- Transfer to a baking sheet lined with parchment paper and bake at 175-180°C, with heat from top to bottom, for 15 minutes.
- Let it cool completely before decorating the outline of the finger nails with jam. Once this is completed it’s ready to be served!
