Sushi | Bar Hermosa Beach, initially a temporary pop-up, has become a permanent fixture in Hermosa Beach, California, due to its overwhelming popularity and community support. Originally planned as a short-term venture, the restaurant's 17-course omakase format quickly became one of Los Angeles's most sought-after dining experiences. This decision to stay was driven by local demand and the strong relationship built with the community, including local farmers and patrons.

SUSHI | BAR HERMOSA BEACH IS HERE TO STAY

“A Pop-Up That Became One of LA’s Toughest Reservations — and Now Finds a Permanent

Home in Hermosa Beach”

Thirteen months ago, Sushi | Bar arrived in Hermosa Beach with a simple

and intentionally modest premise: a two-and-a-half-month pop-up, a handful of seatings, and the same 17-

course omakase format that had already captured the imagination of diners in Miami, Austin, Nashville, and

beyond. What the community gave back was something no timeline could have planned for.

Today, Sushi | Bar Hospitality is proud to announce that Sushi | Bar Hermosa Beach will become a permanent

location — a full-time home in Southern California, rooted in the beach community that embraced it from the

very first seating. What was designed to last ten weeks has become, by the measure of its guests and the broader

culinary press, one of the hardest reservations to secure in the city of Los Angeles.

“We arrived in Hermosa for just a few weeks. Hermosa asked us to stay. That’s not something you say

no to.” — Ryan Stock, Founder, Sushi | Bar Hospitality

A Pop-Up That Outgrew Its Own Timeline

The original intention was never permanence. Sushi | Bar Hermosa Beach was conceived as a temporary

residency, a way to introduce the brand’s intimate omakase format to the South Bay and test the appetite of a

California coastal audience. The appetite, it turned out, was insatiable. Reservations sold out within minutes of

each monthly release. Waitlists grew. Word traveled from the Strand to the hills of Los Angeles and beyond.

The pop-up that was meant to end became the one conversation in Hermosa Beach no one wanted to stop

having.

Over the course of thirteen months, Sushi | Bar Hermosa Beach earned recognition that few restaurants,

permanent or otherwise, achieve in their first year. OpenTable named it among the Top 100 Best Restaurants

in the Country, a designation shared by a small number of restaurants across every category and market in the

United States. Local and national outlets followed, acknowledging what Hermosa Beach diners had already

decided for themselves: that this was something worth protecting.

Built by the Community

The decision to make Hermosa Beach a permanent home was not a corporate one. It was a community one.

From the local farmers and purveyors who supply the kitchen, to the guests who returned month after month

and brought their families and friends, to the neighbors and local businesses who welcomed Sushi | Bar into

the fabric of the South Bay — this permanence belongs to them as much as it does to the team behind the

counter.

Sushi | Bar Hermosa Beach sources with the same philosophy that guides every location in the group: fish

flown in weekly from the finest markets in Japan, Australia, Europe, and California; regional produce and

specialty ingredients drawn from local growers who share the restaurant’s commitment to quality and craft. The

South Bay’s agricultural and artisan community has become a genuine part of the menu — not as a talking

point, but in flavor and in décor. The 17-Course Journey, California Edition

Every seat at Sushi | Bar Hermosa Beach is a seat at the counter. Twelve guests per seating, no exceptions. The

format is the same one that earned Sushi | Bar its reputation across six markets: a 17-course chef-guided

omakase that moves through nigiri, small plates, and seasonal expressions shaped entirely by what arrived that

week from Japan, Australia, Europe, and the California coast. The menu changes seasonally. The care behind

it never is.

Guests are welcomed 30 minutes before their seating with a handcrafted cocktail — an invitation to slow down,

set the evening’s tone, and arrive at the first course ready to be surprised. Drink pairings span sake, curated

wines, and beer, with the sake program reflecting the same sourcing standards applied to the fish. The

experience is intimate by design, conversational by nature, and Japanese at its core but with a modern touch.
