Salmon and avocado rolls

Serving: 4 people

Ingredients

3 Avocados

150g filet of fresh salmon

150g smoked salmon

1 Spring Onion

100g pickled gherkins

1 tbsp capers

4 tbsp mayonnaise

Chives

Equipment
Oven

Method

  1. Sear the salmon filet in a pan with a little oil on both sides. Let it cool before shredding.
  2. Chop the spring onion, smoked salmon, and gherkin. Mix together with the cold, shredded salmon, dried capers and mayonnaise to taste.
  3. Cut the avocados, remove the pit and skin. Slice.
  4. Place overlapping avocado slices on plastic wrap.
  5. Place a little filling in the center and wrap it into a roll.
  6. Repeat until all the ingredients are finished.
  7. Garnish with dots of mayonnaise and chives before serving.

Quinoa and avocado salad

Serving: 4 people

Ingredients

For the base:

300g of quinoa

1 large avocado

Colourful cherry tomatoes

1 red onion

watermelon

Lamb’s lettuce

For the dressing:

4 tbsp Olive oil

2 tbsp Apple cider vinegar

1/2 tsp Honey

¼ avocado

Salt and black pepper

Method

  1. Prepare the quinoa according to the instructions. Let it cool.
  2. Wash and halve the cherry tomatoes.
  3. Peel and chop the onion.
  4. Cut the avocado in half, remove the pit and skin.
  5. Chop to taste.
  6. Prepare the dressing by crushing all the ingredients and pouring them over the quinoa.
  7. Assemble the salad and serve.
