The SEEDS project is paving the way for healthier, more sustainable food solutions by harnessing the nutritional power of ancestral grains. Led by CNTA, the initiative brings together partners from Egypt, Tunisia, Morocco, and Jordan to create innovative prototypes tailored to local markets and global trends. Our shared goal: deliver products that combine nutrition, sensory appeal, and cultural relevance.
Egypt – High-Protein Beverage
- Objective: Develop a protein-rich drink using ancestral grains.
- Innovation: Incorporating barley and rice protein to enrich the nutritional profile, while keeping the product free from added sugars.
Tunisia – Couscous with Ancestral Grains
- Objective: Reinvent traditional couscous using blends of durum wheat and barley.
- Innovation: Enhanced fiber and protein content while maintaining authentic sensory attributes.
Morocco – Healthy Snack Bar
- Objective: Create a convenient snack bar rich in protein and fiber.
- Innovation: Combining ancestral grains with nuts for a balanced nutritional profile and appealing texture.
Jordan – High-Protein Bread
- Objective: Develop a bread enriched with ancestral grains for improved nutrition.
- Innovation: Leveraging fermentation techniques to enhance digestibility and flavor.
Looking Ahead
Once the formulations of the different prototypes are optimized, the next phase will be scaling up to pre-industrial or industrial levels locally in MENA countries and initiating the second prototype development by each partner. These products will then undergo consumer testing to validate acceptance, ensuring they meet market expectations while delivering on health and sustainability.
