The Vitamin D Pizza will be available by the slice exclusively at a pop-up event at Flat Earth Pizza, Bethnal Green, East London for just £1 during a special “Sunshine Happy Hour” on 20th November (from 2pm) for takeaway.

The pop-up event offers Londoners an affordable way to winter wellness and to top up on Vitamin D, a nutrient many people in the UK lack during darker months. Each pizza slice features UV-treated mushrooms, which naturally increase Vitamin D levels, making them a simple, delicious nutritional boost for the winter months.

“It’s sunshine in a slice,” says Miguel Barclay. “This mushroom-packed pizza proves you can eat well, feel good, and spend less. Great nutrition really shouldn’t cost the earth.”

The pizza combines thyme roasted chestnut mushrooms with Flat Earth’s “monster sauce” (a vibrant blend of cavolo nero, olive oil, garlic, and parmesan), topped with fior de latte and grated parmesan. Designed to be both flavourful and sustainable, the recipe makes use of the entire mushroom to minimise waste.

The Science Behind the Slice

Mushrooms are rich in flavour, low in cost, and when UV-treated, they become a natural source of vitamin D. This makes them a simple and affordable nutritional boost this winter. “We love cooking with mushrooms, they’re so versatile and full of flavour, the fact that you can use the whole mushroom reducing food waste, makes them hugely sustainable.
